- For marinade, in a small bowl whisk together orange juice, oil, vinegar, soy sauce, garlic, ginger and red pepper flakes. Reserve 3/4 cup. Pour remaining marinade into a large resealable plastic bag; add chicken. Seal bag and refrigerate at least 1 hour. Add onion, bell pepper and zucchini; seal bag and toss to coat. Refrigerate 20 minutes more.
- Preheat grill to medium (300°F to 350°F). Remove chicken and vegetables from marinade; discard marinade. Thread chicken and vegetables onto 8 (12-inch) skewers.â?
- Place skewers on grill. Grill, covered, 8 to 10 minutes or until chicken is no longer pink (165°F). Remove from grill. If desired, place on mixed salad greens. Serve with reserved marinade.
