Ingredients

  • 4 (5- to 6-oz.) boneless, skinless chicken breasts
  • 1 (6-oz.) bag mixed salad greens
  • 1/4 cup dried cherries
  • 1 to 2 celery stalks, thinly sliced
  • 2 to 3 green onions, thinly sliced
  • 1/4 cup roasted, salted shelled pistachios
  • 1/4 to 1/3 cup poppy seed dressing

  1. Coat a large grill pan or nonstick skillet with nonstick cooking spray; place over medium heat. Season chicken with salt and pepper to taste. Place chicken in pan; cook 8 to 10 minutes per side or until an instant-read thermometer registers 165°F. Let stand 5 minutes. Thinly slice; set aside.
  2. Meanwhile, in a large bowl combine salad greens, cherries, celery, green onion and pistachios. Drizzle with dressing; toss to coat.
  3. Place salad on 4 plates. Top each salad with sliced chicken, and serve.
