Ingredients

  • 4 cups pitted fresh cherries (about 2 lbs.)
  • 2 2/3 cups heavy cream
  • 2 eggs
  • 3/4 cup flour
  • 3/4 cup granulated sugar, divided
  • 1/4 cup butter, melted
  • 2 tsp. vanilla extract
  • 1/4 tsp. kosher salt
  • Powdered sugar (optional)

  1. Preheat oven to 375°F. Lightly grease a 2-quart quiche dish or 11x7x2-inch baking dish. Place cherries in dish; set aside.
  2. In a medium bowl whisk together cream, eggs, flour, 1/2 cup of the granulated sugar, melted butter, vanilla and salt; pour over cherries. Sprinkle with remaining 1/4 cup granulated sugar.
  3. Bake 1 hour or until set. Sprinkle with powdered sugar, if desired, and serve warm.
