Ingredients

  • 1 (12-oz.) pkg. broccoli slaw
  • 1 2/3 cups seedless red grapes, halved
  • 1/3 cup chopped sweet onion
  • 1/2 cup orange juice
  • 2 tbsp. fresh lime juice
  • 5 tbsp. light brown sugar
  • 1/4 tsp. chipotle powder
  • 1 chayote squash, halved and seeded
  • 1 firm mango, peeled, cut into 1/2-inch slices
  • 1 tbsp. olive oil

  1. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). In a large bowl combine broccoli slaw, grapes, onion, orange juice, lime juice, brown sugar, chipotle powder, and salt to taste. Set aside.
  2. Peel chayote, if desired. Cut lengthwise into 1/4-inch slices. Place in a bowl. Add mango and oil; toss to coat.
  3. Grill chayote and mango 3 minutes per side or until chayote is crisp-tender and mango is just heated through. Place chayote and mango on plates, top with broccoli slaw mixture, and serve.
