Ingredients

  • 1 pkg. mixed salad greens
  • 1 can mandarin oranges, well-drained
  • 1 pkg. cooked, sliced chicken breast
  • 2 thin slices red onion, cut in half and sliced into crescents
  • 1/4 cup pecans, toasted
  • 1/2 cup bottled light Italian or balsamic vinaigrette salad dressing
  • 2 ripe avocados, pitted, peeled and cut into chunks

  1. In a large salad bowl, combine salad greens, mandarin oranges, chicken, onion and pecans.
  2. In a small bowl combine dressing and 1/2 cup of the avocado chunks. Mash and blend into dressing. Add remaining avocado to salad bowl. Add dressing mixture; toss to coat. Serve immediately.
