Cajun Smart Chicken Kabob Bites

Kabobs are a grilling classic favorite. These mini versions, served with toothpicks instead of skewers, offer a portion-controlled alternative for game day snacking that everyone will love.

  • 3 tablespoons Olive Oil
  • 1 Tablespoon Cajun Seasoning
  • 1/4 Teaspoon Garlic Salt
  • 1 Teaspoon Red Wine Vinegar
  • 8 Ounces Smart Chicken, sliced into cubes
  • 1 Red Bell Pepper, cubed
  • 1 Yellow Bell Pepper, cubed


  1. In a small bowl, combine olive oil, Cajun seasoning, garlic salt, and red wine vinegar. Add chicken. Cover and marinate for 30 minutes.
  2. Heat a skillet over medium heat. Add chicken and cook for 10 minutes, stirring occasionally. Add chopped red and yellow bell peppers to the skillet and cook for 5 minutes or until tender. Remove both chicken and bell pepper pieces from the skillet.
  3. Carefully thread 1 piece of chicken, 1 red pepper piece, and one yellow pepper piece onto a small toothpick. Repeat until complete.
  4. Serve hot.
