Ingredients

  • 1 1/2 lbs. fresh beets, peeled, cut into wedges
  • 2 tbsp. packed brown sugar
  • 1 tbsp. freshly grated orange zest
  • 1/3 cup fresh orange juice
  • 1 tbsp. melted butter
  • 1/4 cup chopped pecans, toasted
  • 2 tbsp. chopped fresh parsley

  1. Preheat oven to 375°F. Line a baking sheet with foil; coat foil with gluten-free nonstick cooking spray. Place beets on baking sheet. Roast 25 to 30 minutes or until tender; let cool.
  2. For the glaze, in a small saucepan combine brown sugar, orange zest, juice and butter. Place over medium-low heat; cook and stir until sugar dissolves.
  3. Drizzle glaze on beets; toss to coat. Top with pecans and parsley, and serve.
