- For relish, place corn in a microwave-safe dish; cover loosely with damp paper towels. Microwave on HIGH 5 minutes, turning corn halfway through cooking. Let stand 3 minutes. Cut kernels from cobs; place in a large bowl. Stir in tomatoes, green onions, cilantro, lime juice and 1 1/2 teaspoons of the Cajun seasoning; set aside.
- Preheat grill to high (400Â°F to 450Â°F). Brush oil on both sides of fillets and sprinkle with remaining 2 tablespoons Cajun seasoning. Grill fillets 6 to 8 minutes per side or until fish flakes easily with a fork. Top with cilantro leaves and lime wedges, if desired, and serve with corn and tomato relish.
