Ingredients

  • 1 lb. ground beef
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 (10-oz.) can diced tomatoes with green chiles, undrained
  • 1 cup chunky salsa
  • 1/2 cup chopped fresh cilantro
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 12 corn tortillas, warmed
  • Shredded Monterey Jack (optional)
  • 1 tsp. chili powder

  1. For the filling, in a large skillet cook beef over medium-high heat until browned; drain fat. Stir in beans, tomatoes, salsa, cilantro, cumin, coriander and chili powder; bring to boiling. Reduce heat; simmer, uncovered, 5 to 10 minutes or until most of the liquid evaporates. Season with salt and pepper to taste.
  2. Spoon filling into warmed tortillas, sprinkle with cheese (if desired), and serve.
