Ingredients

  • 1 1/2 lb. ground beef
  • 1 cup quick-cooking oatmeal
  • 1 (5-oz.) can evaporated milk
  • 1/2 cup chopped onion, divided
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder, divided
  • 1 cup ketchup
  • 3/4 cup packed brown sugar
  • 1 tsp. liquid smoke

  1. Preheat oven to 350°F. In a large bowl combine ground beef, oatmeal, milk, 1/4 cup onion, chili powder and 1/4 teaspoon garlic powder. Season with salt and pepper to taste. Shape into 1-inch meatballs, then place in a 15x10x1-inch baking pan. Bake 15 minutes or until browned and an instant-read thermometer registers 165°F. Remove from oven; drain fat.
  2. Meanwhile, for sauce, in a medium bowl stir together ketchup, brown sugar, remaining onion, liquid smoke and remaining garlic powder. Pour over meatballs in baking pan; toss to coat. Bake, uncovered, 10 minutes more or until sauce is bubbly. Serve warm.
