Ingredients

  • 2 tsp. canola oil
  • 1 (3-lb.) beef bottom round roast, trimmed
  • 1 1/2 tsp. garlic powder
  • 1 tsp. freshly ground pepper
  • 1 large onion, thinly sliced
  • 1/2 cup balsamic vinegar
  • 1 (14-oz.) can low-sodium beef broth
  • 1 (8-oz.) pkg. sliced white mushrooms
  • 1 (8-oz.) pkg. portobello mushrooms (stems removed) or baby bella mushrooms, thinly sliced
  • 1/4 cup chopped fresh thyme
  • Fresh thyme sprigs (optional)

  1. Preheat oven to 350°F. In a large Dutch oven heat oil over medium-high heat. Sprinkle beef with garlic powder and pepper. Add beef to pan; cook 5 minutes, turning to brown all sides. Remove meat from pan and lightly cover with foil.
  2. Add onion to pan; cook and stir 4 minutes or until tender. Stir in vinegar and broth, scraping up browned bits.
  3. Return beef to pan. Cover and place in oven. Roast 1 1/2 hours. Add mushrooms and chopped thyme; roast 30 minutes more or until beef is tender. Slice beef, and serve with mushrooms and (if desired) thyme sprigs.
