Apple-Walnut Cake

Ingredients

  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 cups granulated no-calorie sugar substitute
  • 1 cup vegetable oil
  • 3 eggs
  • 2 tsp. vanilla extract
  • 3 cups diced apple (about 3 medium)
  • 1 cup finely chopped walnuts or pecans
  • 1 cup packed brown sugar
  • 1/2 cup butter
  • 1/4 cup evaporated milk

  1. Preheat oven to 350°F. Coat a 13x9x2-inch baking pan with nonstick cooking spray; set aside. In a medium bowl stir together flour, salt and baking soda; set aside.
  2. For batter, in a large bowl combine sweetner, oil, eggs and vanilla. Beat with an electric mixer on medium speed 2 minutes. Add flour mixture, a little at a time, and beat on low speed just until combined. Using a spoon, fold in apples and nuts.
  3. Spoon batter into prepared pan. Bake 40 to 45 minutes or until a toothpick inserted near center comes out clean.
  4. Meanwhile, in a small saucepan combine brown sugar, butter and evaporated milk. Bring to boiling; reduce heat. Simmer, uncovered, 3 minutes or until sugar dissolves, stirring occasionally. Pour over warm cake, and serve.
