Apple-Sweet Potato Bake

Ingredients

  • 1 medium to large sweet potato, peeled and sliced 1/4-inch thick
  • 2 large apples, cored, peeled and cut into wedges 1/4-inch thick
  • 8 oz. diced ham (optional)
  • 1/4 cup orange juice mixed with 1 tsp. cornstarch
  • 1/4 cup firmly packed brown sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 tbsp. butter
  • Oat Topping:
  • 1/4 cup flour
  • 1/2 cup old-fashioned oats
  • 2 tsp. brown sugar
  • 2 tbsp. butter

  1. Preheat oven to 350°F. Coat a 3-quart baking dish with nonstick cooking spray. Bring a large pot of water to boiling. Add sweet potato; cook 15 minutes or until tender; drain well. Alternate layers of sweet potato, apple and (if desired) ham in baking dish; set aside.
  2. In small saucepan over medium-low heat combine orange juice, brown sugar, cinnamon, salt and butter. Heat until butter melts and sugar dissolves. Pour over sweet potato mixture.
  3. For Oat Topping, in a medium bowl combine flour, oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle on sweet potato mixture. Bake 30 minutes or until topping is browned and apples are fork-tender.
