Ingredients

  • 1/2 cup quick-cooking oats
  • 1/2 cup packed light brown sugar
  • 1/4 cup plus 1 tbsp. flour, divided
  • 3/4 tsp. ground cinnamon, divided
  • 4 tbsp. chilled butter (1/2 stick), cut into small pieces
  • 4 baking apples, peeled, cored and chopped
  • 2 tsp. fresh lemon juice
  • 1/2 cup granulated sugar
  • 4 oz. shredded Cheddar (1 cup)

  1. Preheat oven to 375°F. In a medium bowl combine oats, brown sugar, 1/4 cup of the flour and 1/4 teaspoon of the cinnamon. Using a fork or pastry blender, cut in butter until the mixture is coarse and crumbly; set aside.
  2. In a large bowl combine apples and lemon juice; toss to coat. Add granulated sugar, remaining 1 tablespoon flour and remaining 1/2 teaspoon cinnamon; mix well to coat. Place 6 (1-cup) ramekins on a rimmed baking sheet. Spoon apple mixture evenly into each; top evenly with cheese. Sprinkle with oat crumbles.
  3. Bake 15 minutes. Reduce oven to 350°F; bake 20 to 25 minutes more or until apples are tender. Remove from oven; let stand 10 minutes before serving.
