- In a skillet over medium high heat, add the olive oil and Italian sausage. Cook for 5 minutes.
- Add the diced onions into the pan sautéing them with the Italian sausage for another 5 minutes or until the sausage is cooked through.
- Add the riced veggies and kale, cooking for another 5 minutes or until the kale is tender and the riced veggies are warmed through.
- Add salt & pepper to taste.
- Sprinkle with crumbled goat cheese, serve and enjoy!
