Tortilla Veggie “sushi” wrap-ups

Ingredients

  • Our Family Whole Wheat Tortillas
  • 1 Avocado
  • ½ cup Imitation crab or Our Family canned Tuna
  • 1 cup Medium grain sushi rice
  • ½ cup Shredded carrots
  • 1 Red bell pepper
  • Our Family Soy Sauce for dipping

  1. Boil rice according to instructions.
  2. Mash a thin layer of avocado on the tortilla. This will help the other ingredients stick and stay in the wrap.
  3. Over the layer of mashed avocado, spread a thin layer of rice. The rice will be sticky so it may not cover the entire tortilla evenly.
  4. On an outer edge of the tortilla wrap, place a thin line of crab meat or tuna. For a veggie alternative replace with a cucumber slice.
  5. Add 3-4 thinly sliced bell peppers and shredded carrots.
  6. Tightly roll tortilla into a tightly wrapped log. Slice with a bread knife. Dip in soy sauce or sweet and sour sauce.
