Ingredients

  • 6 corn tortillas
  • 4 tbsp. vegetable oil, divided
  • 1 lb. chicken tenders
  • 1 (16-oz.) can refried beans
  • 1/4 to 1/2 tsp. cayenne pepper
  • 1 cup fresh spinach
  • 1 medium tomato, cut into 6 slices
  • 1/2 cup shredded Mexican-style cheese (2 oz.)

  1. Preheat oven to 300°F. Using 1 tablespoon of the oil, brush each tortilla lightly with oil. Arrange on a baking sheet. Bake 13 to 15 minutes or until crisp, turning once.
  2. Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high heat. Season chicken with salt and pepper to taste;add to skillet. Cook and stir 3 to 4 minutes or until no longer pink (165°F).
  3. Meanwhile, in a microwave-safe bowl combine refried beans, remaining oil and cayenne pepper. Cover and microwave on HIGH 1 to 2 minutes or until heated through, stirring once.
  4. Transfer warm tortillas to individual plates. Layer each tortilla with bean mixture, spinach, tomato, chicken and cheese. Serve warm.
