Ingredients

  • 1 1/2 lbs. haddock
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1/3 cup jarred pesto
  • 2 pkg. cherry tomatoes or grape tomatoes, halved
  • 1/2 cup chopped red onion
  • 1 tbsp. olive oil
  • 1/4 cup shredded Parmesan cheese

  1. Preheat grill to medium (300°F to 350°F). Season haddock with salt and pepper; rub evenly with pesto. Set aside.
  2. Place tomatoes and chopped onion in a salad bowl. Drizzle with oil and sprinkle with cheese; toss to coat. Set aside.
  3. Place fish on grill. Grill 4 to 6 minutes per side or until fish flakes easily with a fork. Remove from grill and serve with reserved tomatoes.
