- In a large bowl toss pork with taco seasoning plus pepper to taste until evenly coated. Set aside.
- In a large nonstick skillet heat oil over medium-high heat. Working in batches, add pork to skillet; cook and stir until browned. Return all pork to skillet.
- Add salsa and preserves to skillet; bring to boiling. Reduce heat; simmer, covered, 12 minutes or until pork is heated through (145°F), stirring occasionally. Spoon pork and sauce on rice, and serve.
