Ingredients

  • 2/3 cup cornflakes cereal, crushed
  • 1/4 cup grated Parmesan (1 oz.)
  • 1 tbsp. Italian breadcrumbs
  • 1 oz. dry ranch dressing mix (1/2 pkg.)
  • 3 tbsp. butter, melted
  • 6 boneless, skinless chicken breast halves (about 2 lbs.)

  1. Preheat oven to 350°F. In a shallow dish combine cereal, cheese, bread crumbs and dressing mix. Season with salt and pepper to taste. Set aside.
  2. Place butter in another shallow dish. Dip chicken breasts, one at a time, in butter, then in breadcrumb mixture to coat. Arrange chicken in a shallow baking pan.
  3. Bake 20 to 25 minutes or until an instant-read thermometer inserted in chicken reaches 165°F. Serve hot.
