Paleo Banana Bread

Ingredients

  • 2 medium bananas
  • 2 1/2 tsp honey
  • 2 tsp vanilla extract
  • 3 1/2 tsp coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 4 eggs
  • 1/2 cup coconut flour
  • 1/2 cup almond meal
  • 3/4 tsp baking soda

  1. Preheat oven to 340° F.
  2. Mash bananas and add in honey, vanilla, melted coconut oil, applesauce and eggs in a medium mixing bowl.
  3. Add coconut flour, baking soda, and almond meal. Allow to sit for 2 minutes to let the flour absorb moisture.
  4. Pour mixture into a greased loaf pan and bake for 40 minutes to one hour. If bread is browning faster than the inside is cooking, cover the pan with foil.
  5. Allow bread to cool before slicing, serve and enjoy!
