Ingredients

  • 1 lb. lean ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced (1 tsp.)
  • 1 (6-oz.) can tomato paste
  • 1 tsp. paprika
  • 1 (28-oz.) can baked beans
  • 1 1/2 cups self-rising flour
  • 1/4 cup vegetable shortening
  • 1 egg
  • Lowfat milk
  • 1 tbsp. vegetable oil
  • Melted butter (optional)
  • Additional paprika (optional)

  1. Coat a 2-quart rectangular baking dish with nonstick cooking spray; set aside. In a large skillet cook and stir ground beef, onion and garlic over medium-high heat until meat is browned. Drain fat.
  2. Preheat oven to 425°F. For dough, place flour in a medium bowl. Cut in shortening until coarse crumbs form. In a glass measuring cup combine egg and enough milk to equal 1/2 cup. Whisk into flour mixture just until combined.
  3. On a lightly floured surface, roll dough into a 12x9-inch rectangle. Brush with oil then spread with reserved beef mixture. Starting from the short side, roll up dough, jelly-roll style. Cut roll into 8 slices. Arrange slices on top of beef mixture in baking dish. Brush slices with melted butter and sprinkle with paprika, if desired. Bake 20 to 30 minutes or until bubbly and biscuits are golden. Let stand 10 minutes before serving.
  4. Stir in tomato paste, 1 teaspoon paprika and 1 1/4 cups water. Bring to boiling; reduce heat. Cover and simmer 5 minutes. Season with salt and pepper to taste. Set aside 1 cup of the beef mixture. Stir baked beans into remaining beef mixture in skillet. Transfer to prepared baking dish; set aside.
