Ingredients

  • 4 (6-oz.) mackerel fillets
  • 2 tbsp. chopped fresh oregano, divided
  • 2 tbsp. olive oil, divided
  • 2 1/2 cups cherry tomatoes, halved
  • 1/4 cup sliced black olives
  • 3 green onions, finely chopped
  • 1/4 cup balsamic vinegar

  1. Season fillets with 1 tablespoon of the oregano, and salt and pepper to taste. Drizzle with 1 tablespoon of the oil; set aside.
  2. For the relish, in a small bowl combine tomatoes, olives, onions, vinegar, remaining 1 tablespoon oregano, remaining 1 tablespoon oil, and salt and pepper to taste. Set aside.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Place fillets on grill rack; grill 9 to 11 minutes or until fish flakes easily with a fork. Remove from grill, top with relish, and serve.
