Ingredients

  • 4 lobsters
  • 1 cup light mayonnaise
  • 1 cup light sour cream
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. white wine vinegar
  • 2 tbsp. dried Italian seasoning
  • 1 garlic clove, minced
  • 1/4 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 1/2 cups broccoli florets
  • 5 cups Bibb lettuce
  • 1 1/2 cups chopped tomatoes
  • 1 red bell pepper, seeded and thinly sliced

  1. In a large kettle or Dutch oven steam lobsters in 1 inch of boiling salted water 8 to 10 minutes. Remove from pot, reserving 1/4 cup cooking liquid; let cool.
  2. Remove meat from shell, tail and claws; coarsely chop. Set aside.
  3. For the dressing, in a blender or food processor combine mayonnaise, sour cream, lemon juice, vinegar, Italian seasoning, garlic, salt and pepper; pulse until well-blended. Cover and refrigerate until serving.
  4. Cook broccoli in boiling water 5 minutes or until crisp-tender; drain. Plunge into a bowl of ice water to stop cooking; drain.
  5. Place broccoli, lettuce, tomatoes and bell pepper in a salad bowl or serving platter. Top with lobster and dressing, and serve.
