Ingredients

  • 1/2 (8-oz.) loaf French bread, crust removed and cubed
  • 2 lb. lean ground beef
  • 7 cloves garlic, minced and divided
  • 2 eggs
  • 6 baking potatoes, peeled and quartered
  • 1 onion, chopped
  • 1 tbsp. olive oil
  • 1 (28-oz.) can diced tomatoes, undrained
  • 1 tsp. dried oregano
  • 1/2 tsp. sugar

  1. Preheat oven to 350°F. Lightly coat a 3-quart casserole with nonstick cooking spray; set aside. In a large bowl combine bread and enough water to cover. Let stand 5 minutes. Drain water, pressing bread to remove excess water.
  2. Add beef, 4 cloves garlic and eggs to bowl; stir to combine. Season with salt and pepper to taste. Place beef mixture into prepared baking dish and shape into a loaf. Arrange potatoes around meat loaf. Bake, uncovered, 45 minutes.
  3. Meanwhile, in a large saucepan heat oil over medium-high heat. Add onion and remaining garlic; cook and stir until tender. Sir in tomatoes, oregano, sugar and 1 cup water. Bring to boiling; reduce heat. Simmer, uncovered, 30 to 40 minutes or until thickened, stirring occasionally. Season with salt and pepper to taste.
  4. Remove meat loaf from oven. Spoon tomato sauce over meat loaf. Bake, uncovered, 40 to 45 minutes more or until an instant-read thermometer registers 160°F and potatoes are tender. Let stand 10 minutes before serving.
