Ingredients

  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • 2 cloves garlic, minced
  • 3 ripe tomatoes, sliced 1/ 4 inch thick
  • 1 loaf Italian bread, split in half lengthwise, horizontally
  • 2 tbsp. grated Parmesan cheese
  • 1 tbsp. chopped fresh rosemary

  1. Coat grill rack with nonstick cooking spray. Preheat grill to low.
  2. Heat butter, oil and garlic in small saucepan over medium-low heat until butter melts, about 3 minutes.
  3. Grill tomatoes and bread 3 to 5 minutes or until brown. Remove from heat and brush bread with butter mixture; arrange tomato slices on bread and sprinkle with cheese and rosemary. Return to grill 2 minutes more or until cheese melts. Slice and serve.
