Ingredients

  • 1/2 cup chopped fresh basil, divided
  • 1/2 cup chopped fresh oregano, divided
  • 2 garlic cloves, minced
  • 1 1/2 lbs. London broil (top round steak)
  • 1/4 cup red wine vinegar
  • 2 tbsp. fresh lemon juice
  • 3 Roma (plum) tomatoes, chopped
  • 1/4 cup reduced-fat feta
  • Pitted kalamata olives (optional)

  1. In a small bowl combine 1/4 cup of the basil, 1/4 cup of the oregano, garlic, and freshly ground pepper to taste; mix well. Place steak in a large dish and rub with herb mixture. Drizzle with vinegar and lemon juice; cover and refrigerate at least 2 hours, turning occasionally.
  2. In a small bowl combine tomatoes, feta, and remaining 1/4 cup basil and 1/4 cup oregano. Set aside.
  3. Preheat grill to medium-high (350°F or 400°F). Place steak on grill. Grill, covered, 6 to 8 minutes per side (145°F for medium-rare) or to desired doneness. Top with tomato mixture and (if desired) olives, and serve.
