Ingredients

  • 8 skinless, boneless chicken breasts (2 1/4 to 2 1/2 lbs.)
  • 2 tbsp. olive oil
  • 8 oz. fresh mushrooms, sliced
  • 2 tbsp. thinly sliced fresh basil or 3/4 tsp. dried basil
  • 1 garlic clove, minced
  • 2 oz. prosciutto or ham, coarsely chopped
  • 2 Roma (plum) tomatoes, seeded and chopped
  • 1/3 cup shredded Asiago or Parmesan

  1. Preheat oven to 350°F. Season chicken with salt and pepper to taste. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, half at a time; cook 2 to 3 minutes per side or until browned. Transfer chicken to a rectangular 3-quart baking dish. Bake, uncovered, 20 minutes.
  2. Meanwhile, in the same skillet cook mushrooms, basil and garlic, stirring occasionally, until mushrooms are tender. Remove from heat. Stir in prosciutto and tomatoes.
  3. Remove chicken from oven. Spoon mushroom mixture on each chicken breast; sprinkle with cheese. Return to oven; bake 5 minutes more. Serve hot.
