Ingredients

  • 2 large, firm ripe tomatoes, thinly sliced
  • 6 oz. fresh mozzarella, sliced
  • 1/3 cup thinly sliced fresh basil
  • 2 tbsp. capers, drained
  • Coarse salt
  • 2 tbsp. extra virgin olive oil
  • Freshly ground black pepper
  • Fresh basil sprigs (optional)

  1. On each of 4 individual plates, alternate tomato and mozzarella slices in a stack.
  2. Sprinkle with basil and capers. Season to taste with salt and pepper, and drizzle with oil. Top with a basil sprig (if desired), and serve.
