Ingredients

  • 24 white mushrooms (about 2 inches indiameter), stems removed
  • 1/4 cup pesto
  • 1/4 cup olive oil
  • 2 tbsp. grated Parmesan
  • 1 (4-oz.) wheel Brie, rind removed; cut into 24 pieces

  1. Preheat oven to 350°F. Clean mushrooms with a damp paper towel. Place in a 15x10x1-inch baking pan, stem side up. Set aside.
  2. For the filling, in a small bowl stir together pesto, oil and Parmesan until combined. Spoon 1/2 teaspoon of the filling into each mushroom. Bake, uncovered, 10 minutes.
  3. Remove mushrooms from oven. Top each with 1 piece of Brie. Bake 5 minutes or until cheese melts and mushrooms are tender. Serve warm.
