- Preheat oven to 375Â°F. Coat an 8x8x2-inch baking pan with nonstick cooking spray. In a small bowl stir together flour and baking powder; set aside. In a medium bowl, using a wooden spoon beat together sugar, oil and egg until combined. Stir in orange juice and vanilla until combined. Stir in flour mixture.
- For cinnamon topping, in a small bowl stir together brown sugar, flour and cinnamon. Add oil; stir until crumbly; set aside.
- Spread half the batter into baking pan. Sprinkle with half the blueberries and half the cinnamon topping. Repeat layers.
- Bake 35 to 45 minutes or until a wooden toothpick inserted near the center comes out clean. Let cool on a wire rack. Serve slightly warm or at room temperature.
