Ingredients

  • 1 (15-oz.) pkg. gluten-free yellow or devil's food cake mix?
  • 1 cup mashed ripe banana
  • 3/4 cup dried cranberries
  • 1/4 cup softened butter
  • 3 eggs
  • 1/2 cup finely chopped pecans
  • Powdered sugar (optional)

  1. Preheat oven to 325°F. Coat a 13x9-inch baking pan with gluten-free nonstick cooking spray.? In a large mixing bowl combine cake mix, banana, cranberries, butter, eggs and 1/3 cup water. Using an electric hand mixer, beat at low speed until combined. Increase speed to medium and beat 1 minute more. Pour batter into baking pan. Sprinkle evenly with pecans.
  2. Bake 20 to 30 minutes or until edges are light golden. Let cool completely in pan. Cut into 16 bars, dust with powdered sugar (if desired), and serve.
