Ingredients

  • 1/4 cup 2% reduced-fat milk
  • 2 tbsp. refrigerated egg substitute
  • 1 tbsp. butter, melted and cooled
  • 1/4 cup dark brown sugar
  • 1/4 tsp. vanilla extract
  • 1/8 tsp. ground cinnamon
  • Pinch salt
  • 2 cups 1/2-inch cubes day-old French bread
  • 1/2 cup peeled, diced apple

  1. Preheat oven to 350°F. Coat 2 (1-cup) ramekins or baking dishes with nonstick cooking spray. In a medium bowl whisk together milk, egg substitute, butter, sugar, vanilla, cinnamon and salt. Add bread; toss to coat. Let stand 5 minutes or until most of the liquid is absorbed. Add diced apple; toss to mix.
  2. Spoon bread-apple mixture evenly into ramekins. Place ramekins in a baking pan. Add hot water to pan to reach halfway up the sides of the ramekins. Place pan in oven. Bake 35 to 40 minutes or until tops are browned. Remove ramekins from water in pan and let cool on a wire rack. Serve warm or at room temperature.
