Kosher food must pass certain technical requirements certified by rabbinical authorities. Wine has special rules & regulations. Technically, kosher wines must be created, bottled, opened, handled, and poured only by Jews, unless the wine is heated to near boiling. Wines heated in this fashion are called "mevushal." Certified Kosher wines are marked on the label with the trademark OU or OK, with the U or the K inside the O.
