Sunrise Quiche

GLUTEN FREE VERSION: Read labels carefully, heavy cream, ham and cheese can all contain gluten. VEGETARIAN VERSION: Omit ham.

Ingredients

  • 8 large eggs
  • 3/4 cups of heavy cream
  • 3 oz. ham, chopped
  • 2 tablespoons butter
  • 2 tomatoes, chopped
  • 2/3 cup cheddar cheese
  • 1/2 cup broccoli, chopped
  • 1/2 cup red onion, sliced

Directions

  1. Preheat oven to 350 degrees. Whisk together eggs, cream, ham, 1 teaspoon of salt, and ½ teaspoon pepper.
  2. Melt the butter in a 10 inch nonstick skillet, add the broccoli, red onion, and tomatoes, cook for 2 minutes.
  3. Reduce the heat and add the egg mixture over the vegetables. Add the cheese and bake for 15 minutes. Let cool before cutting and serve!
